S P R I N G
Wild Garlic Pesto
Wild garlic or Ransoms (Allium ursium) is truly one of the most versatile spring herbs with its mild garlic flavour. The stalks, leaves, flowers and green seed pods can all be used and increase in garlic intensity from leaf to green seed pod!
Wild Garlic Oil
As wild garlic leaves have a mild, sweet garlic flavour they produce a vibrant green coloured oil. The process is the same as for chive oil and can be combined with either rapeseed or olive oil.
Pickled Wild Garlic Buds
Wild garlic buds have a mild garlic flavour and once pickled are sweet and crunchy.
Wild Garlic Capers
There are always more uses of Wild Garlic than you think. Why only use the leaves, buds and flowers? Why not pick the green unripe seeds too?
A crisp, intensely garlic flavour which ‘pop’ in the mouth.
Flowering Currant Cordial
Different springtime blossoms can be used to flavour syrups and cordials both from the hedgerow and garden.
Pickled Magnolia Petals
The first time I tasted these petals I was blown away by their perfumed ginger like flavour with the texture of chicory.

Blackberry Syrup
Blackberries (Rubus fruticosus) are abundant in the hedgerows in early August - mid September.
Blackberry Ketchup
There are so many possibilities for the humble blackberry (Rubus fruticosus).
Here is my take on a savoury sauce/ketchup.
Lime Flower Syrup
There are several varieties of Lime tree found in the UK most commonly the Common, Large leaf and Small leaf varieties.
The flowers are usually picked to make Linden tea. I prefer the large leaf Lime as the honey-scented flowers are more robust and make a delicious syrup

There are so many possibilities for hawthorn berries or haws (Crataegus monogyna). Here is my take on this savoury delight. A perfect accompaniment to eggs, cheese board or charcuterie.

Wild Winter Salad
The Winter may seem a time of year of meagre pickings however there are several plants that thrive in the cold conditions. Below is just a small selection used for a winter salad. Be sure to take only what you need to ensure the plant can continue to grow.
Winter Salsa Verde
This salsa verde can be made with any combination of winter herbs such as Alexanders, Wild Mustard, Three-cornered Leek, Wild Rocket, Sorrel, or Garlic Mustard.
